This summer, British Airways will serve menus inspired by the Olympic Games in 1948, to its passengers. Simon Hulstone and his mentor Heston Blumenthal have created four menus influenced by the dishes proposed by the company in 1948, the year when London last hosted the Olympics and Paraolympic Games. Simon Hulstone benefited from the BA Great Britons programme, which was set up prior to the Olympic Games, and which supports the future British gastronomic talent. During this year, Hulstone was trained by Blumenthal and the two friends spent time thinking about the recipes that they could propose to British Airways.
For the choice of ingredients, Hulstone and Blumenthal have carried out research to discover favorite flavors of Londoners and athletes at the time of the London Games in 1948. There is fish, beef cheek, Cornwall crab or sugar from East of London. Finally, British specialties will be accompanied with for example smoked salmon with Gin and tonic or potato and horseradish with beef.
British Airways will offer these dishes, upholding the image of the Bocuse d’Or, to the three million passengers on long-haul flights between July and September 2012.Dishes will be accompanied with music and commentary, highlighting important achievements of British star performers, during the games.
